About wine

Although the theory indicates that Merlot does not respond well at all to warm climates, the strong ambient humidity has led to the perfect adaptation of this variety to Cadiz lands. An example of this is found in this silky and broad  blend  with a long aftertaste , dominated by the strain of French origin, with a touch of Syrah and Petit Verdot. An original reference that will surprise those who are unaware of the world of Cádiz red wines. After passing through the selection table and prior cooling of the grapes in the chamber, each variety was processed separately in stainless steel tanks. After gravity vatting, in which some clusters are left whole, malolactic fermentation began in the tank and ended in the barrel. Aged for 11 to 14 months in French and American oak barrels with an average use of 6 years.

Degustation notes

Garnet color with a medium-high layer. Intense and frank nose, with notes of undergrowth, ripe red fruit, spices, cherries, coffee and cocoa. Its sweet tannin makes it a silky but powerful wine, with a toasted aftertaste and notes of coffee. Serving temperature 16ºC.

Food pairing

Legumes, roasted vegetables, light stews, rice, game meats, fish in sauce, Cadiz tuna tartar and semi-hard cheeses. Also ideal with nuts and not very sweet chocolate desserts.
