About wine

In the highest part of the Hacienda Vistahermosa, in the heart of the Jerez region of Corchuelo with hard, very stony soils and calcareous clay, Bodegas Luis Pérez grows the Syrah and the Petit Verdot that make up this balanced blend . Minimal intervention and separate fermentation of each variety guide its production, culminating in a concentrated red wine , powerful and silky at the same time. The harvest was carried out manually in boxes of no more than 14 kilos and at night. Each variety was produced separately in stainless steel tanks, after cooling in a chamber and selecting on the table. Subsequently, vatting was carried out by gravity, leaving some whole clusters. The malolactic fermentation began in the tank and ended in the barrel. Aging between 12 to 16 months in French and American oak barrels with an average use of 4 years.

Degustation notes

Garnet color and medium-high layer. Intense and frank nose, with hints of undergrowth, ripe red fruit, spices, cherries, coffee and cocoa. Its sweet tannin makes it silky but powerful. Broad and with a long, toasted aftertaste with echoes of coffee. Serving temperature 16ºC.

Food pairing

Legumes, roasted vegetables, stews or light stews, rice, fish in sauce, game meats and semi-hard cheeses. It also harmonizes well with nuts and desserts with quince or chocolate.
