After collaborating and advising renowned wineries such as Leda Viñas Viejas and Bodegas Victoria, among others, César Muñoz set up an oenological consultancy. This wizard of the Tempranillo variety was born in León and discovered his passion for wine culture when he was young. His working life began by training under the fantastic umbrella of Château Montus and Bouscassé, in the Madiran production area. The wines of César Muñoz from Ribera del Duero are made exclusively with the Tempranillo grape. he objective of César Muñoz’s wine is the search for a differential identity, for the own personality that the terroir provides, respect for the raw material and the application of a simple oenology, as little interventionist as possible.

Winemaking

The old Verdejo vineyards are located in San Román de Hornija. Godello is an old vineyard and the Albarín is about 32 years old. 1.2 hectares of Verdejo, 1 hectare of Godello and half a hectare of Albarín. The soils are characterised by a high concentration of pebbles on the surface and a sandy-loamy texture, poor in organic matter and well drained in the root zone. Yields are less than 1000 kilograms per hectare for Verdejo, 1500 for Godello and 3500 for Albarín. The grapes were harvested by hand. Once in the winery, the grapes are sorted and then destemmed and lightly macerated before being slowly and gently pressed, separating the wine yolks from the second qualities which are discarded. Fermentation and ageing on the lees takes place in new 225-litre French oak barrels for 11 months.

Tasting notes

Bright and clean in appearance, Cienfuegos wine has a pale straw yellow color with soft golden glints. This white wine fermented and aged in barrels forms a fine, glyceric-looking tear with an elegant descent. With a pleasant complexity, in this original blend of Albarín, Verdejo and Godello we find ripe white fruits intermingled with floral notes. Its passage through wood is reflected with numerous spices, highlighting hints of vanilla and an intense smoky background. With a very wide attack that gives way to an unctuous mid palate, with volume and very expressive. Perfect balance between fruit and barrel. Pleasant freshness thanks to excellent acidity. This white wine from the Selección César Muñoz winery leaves us with a persistent finish full of fruity nuances and a soft minerality in the retronasal way.Recommended serving temperature: 9°C — 12°C

Food pairing

It pairs perfectly with fish-based dishes such as baked sea bass, red tuna tataki, but also vegetable puff pastry, pasta, and poultry.
