After collaborating and advising renowned wineries such as Leda Viñas Viejas and Bodegas Victoria, among others, César Muñoz set up an oenological consultancy. This wizard of the Tempranillo variety was born in León and discovered his passion for wine culture when he was young. His working life began by training under the fantastic umbrella of Château Montus and Bouscassé, in the Madiran production area. The wines of César Muñoz from Ribera del Duero are made exclusively with the Tempranillo grape. he objective of César Muñoz’s wine is the search for a differential identity, for the own personality that the terroir provides, respect for the raw material and the application of a simple oenology, as little interventionist as possible.

Winemaking

Optimum is a wine that is difficult to define, a personal selection, a found wine. It is a red wine that is scarce in litres and is only released on the market when César Muñoz decides to do so. There is no continuity, it is not a wine that comes out in good vintages, it is more a question of emotion. It comes from a couple of very old plots and is aged for 20 months in French oak barrels. Powerful and somewhat wild, it is drinkable now if you like strong emotions, but it has a long life and a long way to go for at least the next 10 years.

Tasting notes

Intense and dark cherry color with scarlet edges. Magallanes Optimum red wine forms an elegant and dense slow-falling tear. Intense aromatic complexity, with very ripe red fruit wrapped in a wide range of aging aromas. Very suggestive, this Tempranillo from Ribera del Duero shows an assortment of spices (mocha, cocoa and cinnamon together with pepper, curry and cloves), mixed with intense toasted and smoked notes. The aromatic complexity of this Magallanes Optimum wine leaves a persistent balsamic and mineral background that appears from the first moment. The wine has a wide and enveloping attack, the wood comes to the fore, intense and complex. Notes of fruit jam give it a sweet touch, offset by magnificent acidity and a strong tannin charge, still present, which produces a slightly astringent sensation. This César Muñoz wine has a long and complex finish, with an aftertaste of toasted and smoked notes, as well as fresh balsamic aftertaste.Recommended serving temperature: 16°C — 18°C
