After collaborating and advising renowned wineries such as Leda Viñas Viejas and Bodegas Victoria, among others, César Muñoz set up an oenological consultancy. This wizard of the Tempranillo variety was born in León and discovered his passion for wine culture when he was young. His working life began by training under the fantastic umbrella of Château Montus and Bouscassé, in the Madiran production area. The wines of César Muñoz from Ribera del Duero are made exclusively with the Tempranillo grape. he objective of César Muñoz’s wine is the search for a differential identity, for the own personality that the terroir provides, respect for the raw material and the application of a simple oenology, as little interventionist as possible.

Winemaking

Vineyards located in two estates in the easternmost and highest area (between 900 and almost 1000 metres) of Ribera del Duero (Baños de Valdearados and Bocigas de Perales). Surface area of 5 hectares spread over several vineyards. There are two vineyard areas with scattered plots of pre-phylloxera vines over 90 years old. Abundance of fine gravel on the surface, sandy loam horizon and clay at depth. Continental climate characterised by very cold winters and hot summers. Manual selection of the grapes from vines over 90 years old. Fermentation is carried out in oak vats, subjecting the grapes to a long, gentle maceration. After devatting, the wine is transferred to barrels, where it undergoes malolactic fermentation. Aged for approximately 18 months in new French oak barrels. Once finished, the wines are not subjected to any stabilisation process.

Tasting notes

Magallanes red wine has an intense and bright cherry color with violet hues. With a medium-high robe, this Ribera del Duero red wine forms elegant tinted tears. Intense aromas, defined by ripe, very ripe fruit, with hints of jam. In the background, we find the toasted and spicy (with outstanding notes of vanilla, cinnamon and chocolate). This Tempranillo from Ribera del Duero is expressed with an elegant balsamic and mineral background. Wide and tasty attack. Velvety step and full-bodied. In this wine by César Muñoz, the fruit is fleshy and intense, nuanced by creamy notes and balsamic and mineral notes. Excellent acidity, which gives it verticality, and lively and tasty tannins. Persistent, complex finish, with good fruit, spices and a mineral reminiscence. Very rich.Recommended serving temperature: 16°C — 18°C
