Bodegas Réquiem Hispania is a project that was born almost two decades ago with the idea of becoming big from small with a “garage wine”. The Result: bottled rebellion of purple color and roasted nuances. Pablo Miranda and Adolfo González decided that it was time to do something different with the Tempranillo variety and, at the same time, break the mold in the Ribera del Duero. Thus, bored by the abuse of the predominant woods, standardization and automatisms, but above all driven by their desire to process grapes in an artisanal and traditional way, they founded Bodegas Réquiem Hispania.

Winemaking

Its production begins with a manual harvest in 15 kg perforated boxes. Manual selection upon entry into the winery. Completely destemmed and crushed. Cold maceration for 2 days. Spontaneous alcoholic fermentation without added sulfur with temperature control in stainless steel tanks. Total maceration of 18 days with 2 pump-overs each day + 1 “délestage” at the end. Spontaneous malolactic fermentation. Finally, Réquiem is aged for 18 months, 100% in French oak barrels.

Tasting notes

The nose is dominated by black fruit, floral, scrubland typical of the vineyard and roasted nuances from its aging in barrels. On the palate it is robust and balanced. Complex and intense but fresh.Recommended serving temperature: 12° — 16°C
