This wine is an homage to whom, in the early 1900s, started the history of our family. To those who believed in this difficult terrain and transform this harsh land into a treasure with respect and by working on it with love and passion, in order to produce its best fruits.
Vinification
The main characteristic of this wine is its simplicity. The base, chosen after the harvest, is never filtered and thanks to that factor, we are able to maintain the yeasts natural, which contribute to the refermentation in the bottle. During March it occurs the only bottling of the year, made in order to have the ideal climatic conditions which allow to have zero residual sugar.
Degustation notes
The permanence on the yeasts will give further character to this sparkling wine, which will be dry and delicate with excellent minerality. The perlage is fine and elegant and the veiling given by the sediment on the yeasts gives a further tonality of bread crust.
