Traditional production together with good and excellent raw material and the realization of vinifications differentiated by varieties and plots, allows Pagos de Araiz to create complex and balanced wines. They base themselves on the tradition of a culture, on the wisdom of their ancestors and the knowledge that emanates from this land. They elaborate in the present without forgetting their roots, take advantage of every experience of the past to innovate day by day always looking for their best version.

Winemaking

The vineyard from which this wine comes is known as “Chardonnay Chamaco”. It is a vineyard with a very limited production due to its poor sloping terrain. This gives a particular concentration to the grapes.

Manual harvest first thing in the morning to maintain the freshness of the grapes. The grapes go to the press after being destemmed. The must undergoes a natural settling in a steel tank and the next day it is transferred to new 500-litre French oak barrels for the development of alcoholic fermentation. This lasts 25 days, after which, it is racked and aged again in the same barrels with its lees, with regular batonnages, for 7 months. After a gentle clarification, it is bottled.

Tasting notes

Straw yellow color with slightly golden tones. Clean and attractive. On the nose there are floral notes, citrus fruits, light toasted notes that give it aromatic complexity. Intense and perfumed. Fruity sensation of maturity accompanied by an acidity that prolongs it in the mouth, with a finish reminiscent of yellow fruits, aromas of white flowers and a long, sweet body. It is a white of the Chardonnay variety that makes you fall in love with its freshness, it leaves you wanting and invites you to fully enjoy it.
