About the rice variety
Round and pearly grain rice from the Japonica family. It is grown only in the ecological environment of the Albufera Natural Park (Spain).
Variety of recent appearance derived from the natural selection of the Bomba variety. During cooking it undergoes an accordion effect that allows the rice to absorb a lot of flavor but remain whole and loose.
It is considered by experts to be of extraordinary culinary quality thanks to its chemical composition that maintains the perfect proportion of amylose and amylopectin.
Recommended for Mediterranean cuisine, especially paella. Four proportions of water for one of rice. Approximate cooking time: 18 minutes.
It absorbs a large amount of the flavor of the broth in which it is cooked, but nevertheless it is very difficult to paste.
