Hacienda Solano is a small family-run winery located in La Aguilera, a historic town in the province of Burgos, home to some of the best vineyards of DO Ribera del Duero. Here, at an altitude of about 1000 meters and in extreme climatic conditions, the winery cultivates its old vineyards, some of which are centuries old, in small plots that do not allow mechanization. The technical part of the wine production is led by Sophie Khün, an Alsatian oenologist with a long professional career in France and Australia, and Toni Sarrión (from Bodegas Mustiguillo in Utiel), who joined the project in 2016 to propose a more environmentally friendly concept, with minimal intervention both on the field and in the winery. Even without official certification, the winery follows the principles of organic farming and its goal is to produce wines that speak to terroir, classified according to the age of the vineyards and the soil characteristics of each estate. This is definitely a winery that naturally introduces us to Ribera del Duero, offering us lighter, more delicate, fresh, elegant and long-lasting wines.

Wine making

Vinification in steel tanks with temperature control. Cold maceration for 24-36 hours at a temperature of 8-10ºC. Alcoholic fermentation for 9-10 days with slight stirring and stirring, average temperature – 26ºC. Maceration after fermentation for another 4-5 days.

Tasting notes

Wine with an intense purple color, transparent and brilliant. The nose has intense notes of red berries. In the mouth, round and voluminous tannins. Lengthy finale.

Food pairing

Good with rice dishes, sausages, not very aged cheeses, mushrooms, poultry and other white meats.
