They were 48 farmers who founded the Cantina Settecani in 1923, today they are 200. A shared vision that has shaped the future decades thanks to a passionate work. A winery in the heart of Lambrusco Grasparossa’s territory, located in the hamlet of Settecani, on the border of the towns of Castelvetro, Castelnuovo Rangone and Spilamberto. A winery which has been able to grow, never stoping to set new and ambitious goals, overcoming difficulties, and celebrating success. The spirit is the one of a big family made up of families, a business enterprise where decisions are made together, and while watching the year just ended, drawing a first summary, celebrating the important achievements.

Winemaking

Among the first Traditional Methods from Lambrusco Grasparossa grapes, Settimocielo originates in Puianello, at over 425 meters above sea level, from the highest vineyard in the municipality of Castelvetro di Modena: an authentic single vineyard in the high hills with over twenty years of age. The exposure to the Northeast and the excellent excursion between day and night, together with the composition of the land, give perfect grapes to make a classic method sparkling wine of great expressiveness.After 24 months of resting on the lees it is able to combine intense fruity notes of sour cherries and small fruits which then leave room for delicate floral touches and incisive citrus nuances with a fine and persistent perlage. On the palate acidity and flavor come together in a balanced and dynamic sip, thanks to the presence of enveloping and lively bubbles.

Tasting notes

Intense and bright pink color with shades reminiscent of cherry. On the nose, fruity notes of sour cherries and small fruits that then leave room for delicate floral touches and incisive citrus nuances. An enveloping and lively perlage makes the sip dynamic in balance between acidity and flavor.Recommended serving temperature: 6° — 8°C

Pairing recommendation

It lends itself perfectly to being combined with any meal: it goes well with traditional Emilian dishes but also becomes a pleasant discovery in combination with a more contemporary and creative cuisine.
