The history of the Fabiano Winery was founded in 1912 when the founder Francesco Fabiano, with his son Sergio, began to sell their wines in the city of Venice and from this expands its activity in the Veneto hinterland to Verona. At the end of the fifties Sergio Fabiano and his sons moved permanently to Verona, initially in the Cellar of Colà di Lazise where the trade activity took place in all of Northern Italy. In the following decade the family began the construction of a new winery in Sona which became, starting in the early seventies, one of the largest wineries in Italy in terms of volumes of wine produced. The commercial growth of the eighties and nineties saw Fabiano wines exported to all the main countries of the world in ever increasing volumes making Fabiano one of the main wineries of the Verona and national oenology.

Winemaking

Amarone is a wine of ancient lineage. It is produced in limited quantities with grapes from the classic Valpolicella area, carefully selected, dried and vinified according to ancient tradition. The flavour is dry and pleasant with a characteristic aroma and its intense pomegranate colour is the result of prolonged ageing.Hillside vineyards at an altitude of 200-350 metres, located in the municipality of Marano, in the classic Valpolicella zone. Calcareous-Eocene soil. Veronese pergola training system positioned in terraces contained by dry stone walls (marogne). Manual harvesting. Soft crushing of the partially destemmed grapes. Vinification from the ancient technique of drying for about 100 days to the second half of January when the grapes are gently crushed and partially destemmed, fermentation takes place in steel vats for about 50 days, after about 30 days of maceration on the skins. 60% of the wine is aged for 24 months in 20-30-50hl Slavonian oak barrels; the remaining 40% in medium-toasted Allier oak barriques for 18 months. Further ageing in bottle for 6 months.

Tasting notes

Amarone ‘Storica’ characterised by an intense ruby red colour. Vanilla aroma, with notes of cherry, plum and coffee. Full, warm and velvety flavour. This old-school Amarone is an archetype of the style. The aromas are forward, with notes of cherries, plums, dried herbs, savory and sweet spices and cocoa beans. The palate is silky and elegant, with no single flavor dominating the other. It is well balanced and finishes with hints of tobacco leaf and graphite.

Food pairing

It is ideal with braised meats, game and very tasty hard cheeses. It is also suitable at the end of a meal. Serve at a temperature of 18°C, taking care to open the bottle a few hours before serving.
