Valverán Sidra de Hielo Apple Ice Cider 2018 10% vol.


The Valverán Ice Cider 20 Manzanas is inspired by Canadian ice-ciders, which are made with apples harvested frozen from the tree. Although in this case, it is the Asturias apples that mark the personality of this delicious sweet liqueur. All the apples used for its preparation come from native Asturian apples that come from the pomarada owned by the cider mill: “Raxao”, “Durona de Tresali”, “Verdialona”, “De la Riega” and “Fuentes”.


The elaboration is a slow process that needs time and patience, since it is harvested in the press until its commercialization takes two years. The apples are handpicked, washed and examined on a sorting table. Then, they are crushed and pressed, and the must obtained is decanted in stainless steel tanks by applying cold. Once clarified, it is frozen at minus 20 degrees, recreating the effects of frost in the press and thus concentrating the apple sugars naturally. After a slow process of separating the ice and the must, the essence obtained ferments for 10 months at a temperature of 10º C and then remains for 8 months in stainless steel tanks on its lees. Each bottle of this elixir contains the concentrated and fermented must of 20 apples.

Valverán is a pioneer in the production of ice ciders in Spain. It is an ice cider with a very defined personality, full of nuances and with a unique fruit load. It is fresh, sensual, surprising and exclusive, since only 13,000 bottles of this vintage have been produced.

Tasting notes

Golden color with copper reflections. Clean and bright. Frank and aromatic nose, sweet sensations: honey, syrup and caramel. Citrus aromas, bitter orange jam, tangerine and passion fruit, with a predominance of green apple and notes of caramelized apple. Also, slight hints of stone fruit appear: fresh quince, apricot. Sweet and gourmand entry reminiscent of honey. Exquisite balance between acidity and sweetness. The flavor is broad and persistent, elegant and fine, with an acid finish that gives it great freshness. A very fresh ice cider, with a silky touch and a long journey.

Food pairing

Perfect to accompany foie mi-cuît or fresh. Fat, ripe cheeses. Not very sweet desserts, which incorporate apples (apple tart tatin), candied orange peel, tangerine, chocolate, pastry cream, cream or dried fruit. And to surprise, we will harmonize its sweet counterpoint with Iberian cheeks, or with game dishes such as venison or wild boar.
