Ice Cider Valverán 20 Manzanas is inspired by Canadian ice ciders, made from apples frozen at the end of a tree. Although in this case, it is the Asturian apples that give this delicious sweet liqueur its personality. All the apples used in its production come from local Asturian apples from the pomarada belonging to the cider mill: ‘Raxao’, ‘Durona de Tresali’, ‘Verdialona’, ‘De la Riega’ and ‘Fuentes’.

Making wine

Processing is a slow process that requires time and patience, as it takes two years from harvesting in the press to commercialisation. The apples are hand-picked, washed and examined on a sorting table. They are then crushed and pressed, and the resulting wort is decanted cold into stainless steel containers. After clarification, it is frozen at minus 20 degrees Celsius, again producing a frosting effect in the press and thus concentrating the apple sugars naturally. After a slow ice and wort separation process, the resulting essence is left to ferment for 10 months at 10 ºC and then left to settle in stainless steel tanks for 8 months. Each bottle of this elixir contains 20 apples of concentrated and fermented must.Valverán is the pioneer of ice cider production in Spain. It is an ice cider with a very defined personality, full of nuances and a unique fruitiness. It’s fresh, sensual, surprising and exclusive as only 13 000 bottles have been produced this vintage.

Tasting notes

Gold colour with copper reflections. Clean and bright. Frank and aromatic nose, sweet sensations: honey, syrup and caramel. Aromas of citrus fruits, bitter orange jam, tangerine and passionfruit with a predominance of green apple and caramelized apple notes. There are also slight hints of stone fruit: fresh quince, apricot. A sweet and gourmand entry, reminiscent of honey. Excellent balance between acidity and sweetness. The palate is broad and persistent, elegant and refined, with an acidic finish that gives it an excellent freshness. A very fresh ice cider, with a silky touch and a long journey.Recommended serving temperature: 7°C.

Food recommendation

Ideal as a side dish with foie mi-cuît or fresh. Fatty, mature cheeses. Not very sweet desserts containing apples (apple cider tatin), candied orange peel, mandarin oranges, chocolate, pastry cream, cream or dried fruit. And for a surprise, we harmonise this sweet counterpoint with Iberico pork cheeks or game dishes such as venison or venison.
