Guardians of the heritage and know-how of their ancestors for 3 generations, Champagne Yves Jacques run the family vineyard planted with the three Champagne grape varieties in the Marne Valley, the Cote des Blancs and the Aube, in the communes of S\u00e9zanne, Baye, but also Chouilly and Ay, classified as Grand Cru. Their Champagne wines are made in Baye, in their own cellars and in accordance with the traditional method.<\/h5>\n<\/blockquote>\n

MCM 62<\/h3>\n

MCM in roman numerals means 1900 so the cuv\u00e9e 1962 in reference of the winery’s first Chardonnays that were planted by Yves during his installation in 1962. In this Blanc de blancs we find Chardonnays from S\u00e9zanne. This wonderful terroir benefits from substantial sunshine coupled with a chalky and limestone subsoil. Therefore, wines that are balanced between roundness and minerality are obtained. A Champagne to enjoy lightly or with a seafood platter.<\/p>\n

Winemaking<\/h3>\n

Picking 100% by hand with rigourous sorting. Alcoholic and malolactic fermentation at low temperature in stainless steel tanks. Ageing on lees before bottling for 3 months, ageing on laths minimum 24 months.<\/p>\n","protected":false},"excerpt":{"rendered":"
