At 800 meters above sea level, on the gentle hills that were once the seabed of the Mediterranean and under the shelter of the Sierra del Negrete (Utiel), a unique landscape opens up to the eye. An environment where pines, holm oaks and olive trees join the aromatic notes of thyme, rosemary and fennel that dot the valley and combine to wrap the fruit of the vineyards of the Sarri\u00f3n-Mart\u00ednez family, la Bobal. A strong grape that, withstanding extreme climates and apparently infertile limestone soils, cultivated through natural and pioneering processes in the area, offers a fruit full of nuances, elegant and delicate. A grape expression of the soil, the climate, the aromas of the mountains and the proximity of the sea that, together, give the wine its unique Mediterranean character.<\/h5>\n<\/blockquote>\n

Winemaking<\/h3>\n

El Terrerazo at 800 m altitude. Limestone soil of dolomitic origin, with a loamy-sandy texture. Vines planted in 1945 and 1970 from adjoining plots. Conduction in a glass of strict dry land with tillage. Maximum respect for the environment. Manual harvest in boxes of 15 kg. Average yield 19 hl\/ha or 0.4 kg\/m2 of leaf surface. Selection table, cluster. Maceration and fermentation in French oak vats of 35 hl and 50 hl for 20-22 days with small ‘pigeages’. Very smooth extraction. All works are by hand. After the manual racking, only the flower wine is used for aging. Malolactic fermentation in vats of 35 hl and 50 hl. Batonage from 5 to 8 weeks. 18 months of aging in oak vats of 35 hl and 50 hl. Bottled between April and June. No stabilization or filtering treatments.<\/p>\n

Tasting notes<\/h3>\n

\u0421herry red wine with high opacity. Intense and expressive nose with presence of red and black fruit, mineral notes. Enveloping entrance with silky steps. Balanced acidity and persistent finish.<\/p>\n
