The result: a mishmash of purple paint and toasted nuances. Pablo Miranda and Adolfo Gonz\u00e1lez decided it was time to do something different with the Tempranillo variety and at the same time break the Ribera del Duero mould. So they founded Bodegas R\u00e9quiem Hispania, fed up with the abuse, standardisation and automation of the prevailing forests, but driven above all by a desire to process the grapes in an artisanal and traditional way.<\/h5>\n<\/blockquote>\n<h3>Making wine<\/h3>\n<p>The focus is on exploiting the intrinsic quality of the grape with minimal technological and chemical intervention. This way, grapes transported by hand in small 12 kg boxes and refrigerated truck arrive at the warehouses without sulphur additives: 100% grapes. Both alcoholic and malolactic fermentations are spontaneous and temperature controlled. After maceration for around 20 days, the wine remains in the tanks, together with the sediment and the weekly batonnage, until it arrives in the cask at the beginning of the new year. Finally, it is aged for 8 months in new and half-aged French oak barrels.<\/p>\n<h3>Tasting notes<\/h3>\n<p>Electric ruby colour with a deep coat. On the nose, ripe red fruits, liquorice, a hint of anise and menthol.
