The Perez Barquero winery, founded in 1905, is one of the leading wine producers in the Montilla-Moriles region. Specializing in traditional Spanish wines such as Fino, Amontillado, Oloroso, and Pedro Xim\u00e9nez, it uses unique aging methods like fermentation under a “flor” yeast film and traditional American oak barrels, which give the wines distinctive depth and aroma. Perez Barquero wines receive high ratings on the international stage, making them an excellent choice for connoisseurs of quality Spanish wines.<\/h5>\n<\/blockquote>\n

Production Process<\/strong><\/h3>\n

Type : Dry Oloroso.
\nVariety and origin: 100% Pedro Xim\u00e9nez, from the superior quality area of Montilla Moriles Designation of Origin (Sierra de Montilla and Moriles Altos).
\nProduction : Selection of musts; after lees are settled, they are fortified up to 18\u00b0 and sprinkled in oak casks of 500\/600 l. capacity, where wine is kept in oxidative aging.
\nAgeing : Oxidative aging. Criaderas and Solera system over a period of about 25 years in American oak casks.<\/p>\n

Tasting Notes<\/strong><\/h3>\n

Appearance: Brilliant. Intense tear. Mahogany good coating.
\nAroma: Very intense and penetrating. Long aging complex with hints of wood, nuts (walnuts), raisins and spices.
\nTaste: Structured, powerful and warm without excess, dry and velvety at the same
\ntime, fleshy, fullbodied. Smooth on the palate. Slightly bitter and elegant finish. Either alone or with nuts at mid-morning, after lunch or afternoon snack. Perfect pairing with red meat, hunting dishes and meat stews as the quintessential Cordovan dish: oxtail. Recipes with mushrooms or artichokes, mature cheese and pastries. Drink at 12-14 \u00baC, in a wine glass.<\/p>\n
