The Ca\u2019 Salina Winery is located in a magnificent position, standing atop a hill in the heart of the Valdobbiadene DOCG area. From its windows you can admire the stunning beauty of the Prosecco Superiore hillsides embroidered with vineyards and the \u2018Strada del Vino\u2019 wine road. The estate\u2019s large family villa dominates the surrounding landscape and is an obvious destination for wine lovers visiting the area. Tradition, a passion for the land and an appreciation of simple pleasures. These are the values which have motivated the choices made by Gregorio Bortolin and his wife Neva, and which the couple have passed on to their sons Massimo and Michele. With these values firmly in mind, innovation makes sense, as it contributes to ensuring the quality of Ca’ Salina’s products. <\/h5>\n<\/blockquote>\n

Winemaking<\/h3>\n

Whole berries fermented off the skins under soft pressure. Second fermentation (or spumantizzazione) in the autoclave under controlled temperature (known as the \u201cCharmat\u201d method which was developed and perfected in the Valdobbiadene area, the traditional home of the wine and where still today the finest examples are produced).<\/p>\n

Tasting notes<\/h3>\n

Straw yellow colour with green highlights. Fragrant, fruity and flowery aromas and a harmonious and soft flavour. <\/p>\n

Food pairing<\/h3>\n

Excellent with refined pastries. A graceful companion to the sweetest moments.
