Bodegas Langa is currently the main winery in Calatayud and the only one with a long and uninterrupted family tradition. The winery is located in an emblematic area, considered magical throughout the human settlements that have taken place in the area. The Sierra Vicor, at the foot of which the winery is located, was a sacred place for the Celtiberians and had a prominent place in the work of the classical poet Marco Valerio Marcial. <\/h5>\n<\/blockquote>\n

Winemaking<\/h3>\n

Primary fermentation in inox vats fermentation controlled at 16\u00baC. 3 months matured in barrel. Malolactic fermentation not carried out, in order to mantain a high final acidity. Secondary fermentation in bottle at 15\u00baC. Maturation in bottle RESERVA, 40-50 months sur lattes. <\/p>\n

Tasting notes<\/h3>\n

Vibrant pale golden yellow colour. Extremely fine bubbles which slowly surface to form a crown. Fresh aroma with great complexity, with overtones of baking smells, originating from a 40 month vintage, with light tones of fresh fruit of its original wine base. Fresh and smooth taste, fine bubble which integrates into the complexity of the cava. An elegant end, serious, long and dry. <\/p>\n

Food pairing<\/h3>\n
