Born into families of winegrowers, C\u00e9line and Fr\u00e9d\u00e9ric embarked on their own adventure in 2013. They created their Estate nestled in the heart of the Chablis vineyard. With a deep attachment to their family roots, they are building a new Estate with a breath of freedom. <\/p>\n

The plot is located in the village of Pr\u00e9hy to the southwest of the Chablis vineyard on the Kimmeridgian, the upper layer of the Jurassic composed of clay and limestone, with a south-eastern exposure. Surface : 7 ha Middle Age : 40 years old Yeld : 55hL\/ha <\/p>\n

Viticulture<\/strong><\/p>\n

Domaine Guenguen practice a reasoned approach to viticulture having obtained the HVE level 3 label, which translates into ploughing which activates the organic and microbial life of the soil, partial grassing on certain plots and the use of natural fertilizers and treatments against diseases. <\/p>\n

Winemaking<\/strong><\/p>\n

After a long and delicate pressing, a cold settling of about twenty hours, the fermentation took place at around 16\u00b0 to 18\u00b0 C using indigenous yeasts. The malolactic fermentation on fine lees from November to mid-April, then a light fining and filtration on earth in order to obtain a clear and stable wine before bottling by us at the estate. <\/p>\n

Aging is done exclusively in stainless steel vats to preserve the freshness and fruitiness of the wine. These vats are thermoregulated, allowing fermentations at low temperatures to best develop the wine\u2019s aromas. <\/p>\n

Testing <\/b><\/p>\n

A mineral-driven wine with notes of flint, anise, and citrus. A tender, fleshy and delicious unoaked wine. <\/p>\n

Food pairing<\/strong><\/p>\n

As an aperitif, with oysters, seafood salad, Burgundy snails or with fresh goat cheese.<\/p>\n
