Across 80 hectares of vineyards in Contrada Portelli, tradition blends with innovation, resulting in wines that capture the strength, generosity and distinctive character of Sicily. <\/h5>\n<\/blockquote>\n<p>Its bouquet blends the delicacy of flowers with the sweetness of white fruits, giving voice to the <em>Grillo Parlante<\/em> (\u201ctalking cricket\u201d, a nod to Pinocchio\u2019s Jiminy Cricket) and revealing the distinctive flavours of the Grillo grape.<\/p>\n<h3>Winemaking<\/h3>\n<p>Altitude: 50 m above sea level<br \/>Harvest period: late August to mid\u2011September<br \/>Winemaking: grape chilling and cryomaceration in an oxygen\u2011free environment; soft pressing, must settling and fermentation in stainless steel at controlled temperature<br \/>Aging: about four months on the lees (\u201csur lies\u201d), with periodic pump\u2011overs to resuspend the lees, enhancing shelf life and adding pleasant richness to the palate<\/p>\n<h3>Tasting notes<\/h3>\n<p>Color: bright yellow with greenish nuances<br \/>Nose: typical thiol\u2011derived varietal aromas \u2014 exotic fruit, lychee, yellow peach, passion fruit; complemented by terpene notes of white flowers and citrus<br \/>Palate: rich and fruity, balanced by the saltiness imparted by the marine\u2011origin soils (carbonates and limestone)<\/p>\n<h3><strong>Food pairings<\/strong><\/h3>\n<p>It pairs beautifully with both raw and cooked fish, especially when the fish is salt\u2011baked or prepared simply with fresh herbs.
