Their philosophy combines deep respect for the terroir with ecological viticulture and continuous innovation: from Terra Vitis certification and organic conversion to experimental plantings of disease\u2011resistant varieties such as Muscaris, Flor\u00e9al, Voltis and Sauvignac. Winemaking focuses on precise berry\u2011ripeness assessment, gentle pressing, cold settling and long ageing on lees in underground glass\u2011lined tanks, amphorae and oak barrels. The new generation \u2014 Am\u00e9lie and Vincent \u2014 continues to shape the estate\u2019s future, blending tradition, biodiversity and forward\u2011thinking techniques to craft wines that embody the elegance, freshness and unique character of the Ragoti\u00e8re terroir.   <\/h5>\n<\/blockquote>\n<h3>Winemaking<\/h3>\n<p>Harvest takes place in September, followed by strict grape selection. Gentle pressing is combined with five days of cold settling, and the controlled alcoholic fermentation lasts around four weeks. Full malolactic fermentation occurs at the beginning of winter, and the wine is aged for 12 months on fine lees in underground glass\u2011lined tanks.
