At 800 meters above sea level, on the gentle hills that were once the seabed of the Mediterranean and under the shelter of the Sierra del Negrete (Utiel), a unique landscape opens up to the eye. An environment where pines, holm oaks and olive trees join the aromatic notes of thyme, rosemary and fennel that dot the valley and combine to wrap the fruit of the vineyards of the Sarrión-Martínez family, la Bobal. A strong grape that, withstanding extreme climates and apparently infertile limestone soils, cultivated through natural and pioneering processes in the area, offers a fruit full of nuances, elegant and delicate. A grape expression of the soil, the climate, the aromas of the mountains and the proximity of the sea that, together, give the wine its unique Mediterranean character.
Winemaking
El Terrerazo, at 800 m altitude. Dolomitic limestone soil, with a loamy-sandy texture. Traditional viticulture, driving in glass in dry land with tillage. Soil maintenance with alternate plant covers. Maximum respect for the environment. Manual harvest in boxes of 15 kg. Average yield 0.9 kg/m2 of leaf surface. Average yield per hectare: 4500 kg. Vinification of each variety and/or plot separately. Bunch and grain selection table, destemming, light crushing. French oak and stainless steel vinification tanks from 80 Hl to 100 Hl with temperature control. Alcoholic fermentation for 11-13 days with small pumpovers and ‘pigeage’. Average temperature of 26°C. Post-fermentation maceration of 5 to 8 days. Discover manually by gravity, using only the flower wine. Aged for 10 months in French oak barrels and 50-80 Hl vats. Bottled between September and November without stabilization treatments.
Tasting notes
Cherry red color with violet reflections. Clean and bright. Expressive nose with notes of red and black fruit and spicy touches with a mineral background. On the palate it is fresh and silky on the palate.
Pairing recommendation
Good combination with rice dishes, Asian cuisine, sausages, pasta or not very cured cheeses. Ideal with mushrooms, salads or as an aperitif.
