The Anne de Joyeuse cooperative is named after a well-known 16th-century figure, the Duke of Joyeuse, who was bestowed the lordship of Limoux by Henry III.
About the wine
A pioneer in environmental stewardship, “Protect Planet” charter encourages the return of bees to the vineyards — living indicators of sustainable farming and its positive impact on the natural environment. This restored ecosystem forms a true “Butinière”, giving the wine the authentic taste of nature rediscovered.
Vineyards
“La Butinière Chardonnay” is crafted from a selection of the finest parcels.
To the west, oceanic influence and clay‑limestone terraces bring elegance.
To the northeast, Mediterranean climate and clay‑silt soils provide fruit and power.
To the south, the Upper Aude Valley and its Pyrenean climate contribute freshness.
These exceptional conditions, combined with meticulous vineyard work and low yields, allow to obtain the finest grapes for this unique wine.
Winemaking
All grapes are hand‑harvested, sorted on a table and destemmed. Each variety is vinified separately at controlled temperatures: Syrah and Malbec undergo cold pre‑fermentation maceration, while Cabernet and Merlot receive a long 30‑day maceration. The wines are then blended and aged for 9–10 months in French oak barrels.
Tasting notes
“La Butinière Rouge” shows its full expression after one hour of decanting and serving at 14–16°C. Deep purple colour with garnet reflections. Aromas of raspberry, violet and black cherry. The palate is silky and complex, evolving toward velvety notes of red fruits, prunes and spices. The finish is refined, elegant and long.
Food pairing
Beautifully enhances wild boar stew, tandoori chicken, Brie with fresh truffle, wild strawberry tart, or simply an aperitif with charcuterie from the Pays de Sault.
