The origin of all things. The soul of the company. Barbadillo is the south and the sea. It is Cádiz and it is the west wind. It is Sanlúcar and it is tradition. It’s a century-old winery, and it’s the future. Its history dates back to 1821. to the year when manzanilla began to be produced. Since then, Barbadillo has not stopped developing, always looking for wines that surprise and leave their mark.
Sábalo is a tribute to this humble fish that decades ago swam upriver in large shoals through the Guadalquivir basin (and, twenty kilometres downstream, also the Guadalete), but which has now almost disappeared due to river dams.
Winemaking
Vineyards: grapes come from two organically farmed vineyards in the historic pagos of Balbaína and Burujena Soil type: Albariza in both vineyards Harvest: late August Harvest type: manual. Each vineyard was vinified separately to allow a final blend that expresses the intended character of the wine. Fermentation: spontaneous, temperature‑controlled at 17°C in small stainless‑steel tanks Yeasts: indigenous Ageing: four months on lees Bottling: June 2024
Tasting notes
Appearance: clean and bright, golden colour Nose: complex notes of ripe apple and peach, with subtle spices Palate: broad and creamy, hints of ripe fruit and a gentle saline touch
Food pairing
ideal with fish dishes; for the adventurous, try it with tofu, artichokes or cheese. Serving temperature: 6–8 °C.
