The origin of all things. The soul of the company. Barbadillo is the south and the sea. It is Cádiz and it is the west wind. It is Sanlúcar and it is tradition. It’s a century-old winery, and it’s the future. Its history dates back to 1821. to the year when manzanilla began to be produced. Since then, Barbadillo has not stopped developing, always looking for wines that surprise and leave their mark.
About the wine
Vinegar produced through the spontaneous (natural) acetification of Manzanilla wine, aged for years in our Sanlúcar de Barrameda cellars using the traditional Solera and Criaderas system. Its long ageing and the quality of the base wines create a rich and broad aromatic profile with a harmonious and intense bouquet.
Ageing: More than 5 years in oak casks Style: Semi‑sweet
Tasting notes
Appearance: Clean, bright amber colour. Nose: Intense aroma for the most refined palates; slightly pungent, with soft notes of Moscatel wine and white flowers. Palate: Liqueur‑like, smooth and balanced; wide aromatic complexity and a long, attractive finish reminiscent of Moscatel wine.
Food pairing
Pairs beautifully with salads and fruit‑ or citrus‑based dressings. Ideal for marinades, salads, escabeche, reductions, game dishes, fish and legumes.
