Traditional production together with good and excellent raw material and the realization of vinifications differentiated by varieties and plots, allows Pagos de Araiz to create complex and balanced wines. They base themselves on the tradition of a culture, on the wisdom of their ancestors and the knowledge that emanates from this land. They elaborate in the present without forgetting their roots, take advantage of every experience of the past to innovate day by day always looking for their best version.
Two slopes between 360 and 380 meters above sea level with two varieties of soil; (silty clay texture in the lower part and limestone clay in the upper part) surrounded by a continental climate with Atlantic influence, provide the Syrah variety with the ideal environment to develop. The vineyards are cultivated in organic farming and their production does not exceed 4,000 Kg/Ha.
The manual harvest is carried out in the highest quality areas where the first selection is made in 12 kg boxes. Subsequently, the selection of grain is carried out on the reception tables and the vatting. Alcoholic fermentation and maceration takes place in small stainless steel tanks in a careful process for 18 days. Malolactic fermentation takes place in 255 and 500 liter French oak barrels. The wine is racked and aged for a further 12 months in fine-grained French and American oak Bordeaux barrels. Its stabilization is natural.
Bright and intense cherry red color, powerful tannins. Aromas of fresh red fruit, balsamic and tobacco appropriate to the varietal character. Full, greedy and long on the palate. Fruity, silky and persistent finish.
