This is how you transmit the hereditary character of the territory and the harmony of the men that search for excellence on a daily basis.
Winemaking
In Italy, Merlot has found ideal environmental conditions in many northern regions since the 19th century, but it is now widespread with truly surprising results even in Sicily, precisely because Merlot, in adapting to this sunny climate, shows another aspect of its versatile personality, with warmer, spicier flavours. Breeding in counter-espalier, with Guyot pruning. 350 metres above sea level, with a density of 5000 plants per hectare. Yield of 85 quintals per hectare. Harvest at the end of August. Fermentation in steel, ageing in steel, twelve months in barrique.
Tasting notes
Intense ruby red colour with purple hues, with hints of blackcurrants, ripe plums, with hints of pepper and blueberries. The taste is rich and round, with soft, smooth tannins.Recommended serving temperature: 16°C — 20°C
Food pairing
It goes well with red meats such as roast beef, boiled meats, roasts, mature cheeses, poultry and rabbit stews. It can also be considered a wine for the whole meal.
