Born into families of winegrowers, Céline and Frédéric embarked on their own adventure in 2013. They created their Estate nestled in the heart of the Chablis vineyard. With a deep attachment to their family roots, they are building a new Estate with a breath of freedom.
The parcel is located in the village of Préhy, southwest of the Chablis vineyard, on the Portlandian – the upper Jurassic layer composed of clay and limestone – with a North-East exposure. Average vine age: 25 years. Yield: 70 hL/ha.
Viticulture
Domaine Guenguen practice a reasoned approach to viticulture having obtained the HVE level 3 label, which translates into ploughing which activates the organic and microbial life of the soil, partial grassing on certain plots and the use of natural fertilizers and treatments against diseases.
Winemaking
After a long and delicate pressing, a cold settling of about twenty hours, the fermentation took place at around 16° to 18° C using indigenous yeasts. The malolactic fermentation on fine lees from November to mid-April, then a light fining and filtration on earth in order to obtain a clear and stable wine before bottling by us at the estate.
The aging is done exclusively in stainless steel vats to preserve the freshness and fruitiness of the wine. These vats are thermoregulated which allows fermentations to be carried out at low temperatures in order to best develop the aromas of the wine.
Testing
Bright yellow robe, fine and very fruity nose recalling white-fleshed fruits and citrus. The palate is supple and surprises with its freshness. Fruit and a slight liveliness prolong the aromas.
Food pairing
Perfect as an aperitif, with oysters, seafood salad, Burgundy snails, or fresh goat cheese.
Serve between 10–12 °C. Cellaring potential: 2–3 years.
