Christophe Chapillon, French, married with 2 children, was born and lived in Tours, a town in the Loire Valley (France). In the 90’s he moved to Aragon, Spain. In 2006, he decided to follow the family adventure (his uncle being an oenologist in the Loire) and started his own winemaking business. With the help of Cesar Langa (owner of the oldest family estate in Aragon), he launched the ‘Chapillon’ brand. A line of modern and unique, exclusive wines, very different from those usually produced in this area. They are mainly Spanish wines, but with a discreet French influence.

About the wine

Cuvée Paul comes from the Calatayud region, south of Rioja, and its quality is surprising for the price. This wine is perfect for fans of Châteauneuf-du-Pape and other sun-soaked reds, with a predominance of Garnacha.

Winemaking

It is made from 100% Garnacha grown on 70-year-old vines – the kind of fruit typically reserved for the most expensive Rhône wines – and is aged for one year in oak before bottling. Rich and ripe, showing plenty of black and dried fruits, black pepper, and cedar. James Suckling praised Cuvée Paul as a “rich and elegant red” with “excellent balance and a long, polished finish.” Stock up and serve freely, as wines offering this much value are rare. Aged 12 months in American oak (30% new oak).

Tasting notes

Vibrant red-violet colour. Crushed summer black fruits on the nose, with a spicy touch and hints of violets. On the palate, it reveals the warmth of ripe fruit, while lively acidity and light, energetic tannins bring freshness.

Food pairing

Cuvée Paul is a winner that will shine wherever a Rhône or northern Spanish wine would: with lamb, duck confit, quail, or herb-roasted mushrooms.
