Remaining true to its historic home in Aÿ, Collery focuses on the finest Grand Cru Pinot Noir grapes and aims to make every champagne tasting an extraordinary and memorable experience. The Aÿ terroir is located near Epernay, on a beautiful hillside at the foot of the Reims mountain, listed as a UNESCO World Heritage Site.
Maison Collery’s Coteaux Champenois represents a rare and confidential production of still wines crafted from Champagne’s noble native varieties — Chardonnay, Pinot Noir and Pinot Blanc. These two distinctive cuvées, one white and one red, offer an unusual and refined expression of the region’s terroir. Hand‑harvested at perfect maturity, the wines are taut, subtle and remarkably expressive, echoing the historic winemaking traditions that predate modern Champagne.

COTEAUX ROUGE These still wines, marked by generous fruit and graceful tension, are crafted for gourmets and the curious who appreciate Champagne’s traditions. They reveal their full opulence when enjoyed with food.
Winemaking
Alcoholic and malolactic fermentations carried out in a single 228‑L oak barrel.
Tasting notes
Eye: bright and clear, with a fairly deep garnet red hue and a slight bluish tint. Nose: remarkable aromatic breadth with a powerful first impression. A blend of spices such as black pepper, hints of Provence herbs, prune, black cherry and blackcurrant buds. Palate: tactile and velvety, with perfectly integrated tannins. Notes of spices and small black fruits stand out. The finish is long, fresh, slightly tannic and very pleasant.
