At 800 meters above sea level, on the gentle hills that were once the seabed of the Mediterranean and under the shelter of the Sierra del Negrete (Utiel), a unique landscape unfolds. It is an environment where pines, oaks, and olive trees blend with the aromatic notes of thyme, rosemary, and fennel that cover the valley and intertwine with the fruit of the La Bobal vineyards of the Sarrión‑Martínez family.
This is a robust grape variety that withstands an extreme climate and seemingly barren limestone soils. Cultivated through natural and pioneering methods of the region, it offers elegant, delicate, and nuanced fruit.
The expression of the grape reflects the soil, climate, mountain aromas, and proximity to the sea, all of which together give the wine its unique Mediterranean character.

Winemaking

Mediterranean mountain vineyard at 900 m altitude. Calvestra estate in Requena.
Own vineyards on limestone soil with sandy‑loam texture.
Cluster selection table, destemming, and gentle crushing.
Soft pressing, using only the free‑run juice.
Primary fermentation of the base wine in stainless steel with native yeast.
Bottle ageing on the lees for at least 60 months.

Tasting notes

Soft notes of white flowers, fennel, and thyme on the nose.
Hints of dried fruits are also present.
On the palate, the wine is creamy, elegant, and fresh.
Its good acidity and the integration of its fine bubbles are pleasantly surprising.
Long and persistent finish.

Food pairing

Ideal as an aperitif, and excellent with cured meats, Iberico ham, seafood, white meats, rice dishes, and grilled fish.
