At 800 meters above sea level, on the gentle hills that were once the seabed of the Mediterranean and under the shelter of the Sierra del Negrete (Utiel), a unique landscape opens up to the eye. An environment where pines, holm oaks and olive trees join the aromatic notes of thyme, rosemary and fennel that dot the valley and combine to wrap the fruit of the vineyards of the Sarrión-Martínez family, la Bobal. A strong grape that, withstanding extreme climates and apparently infertile limestone soils, cultivated through natural and pioneering processes in the area, offers a fruit full of nuances, elegant and delicate. A grape expression of the soil, the climate, the aromas of the mountains and the proximity of the sea that, together, give the wine its unique Mediterranean character.
Winemaking
Vineyards located in Finca El Terrerazo at 800 m altitude. Limestone soil of dolomitic origin, with a sandy loam texture. Vineyards in glass in dry land with tillage. Soil maintenance with alternate plant covers. Manual harvest in boxes of 15 kg. It is harvested in two passes during the second half of September. Average yield of 1.9-2.2 kg/vine at 2,200 vines/ha. Cold maceration on vintage boxes. Cluster and berry selection table, de-stemmed and lightly crushed. Fermentation in 50 and 80 Hl oak vats with 20% of its own stems, added manually in fine layers in vatting, for 10-13 days, worked only with ‘pigeages’. Post-fermentative maceration of 8-10 more days. Discover manually by gravity, using only the flower wine. Aging 6-8 months of mixed aging in 225 I French oak barrels and 35 Hl vats.
Tasting notes
Cherry red colour. On the nose aromas of red fruit and flowers stand out. Delicate entry in the mouth. Elegant and fresh for its acidity.
Pairing recommendation
Good combination with mountain rice or mild stews. Its acidity highlights dishes such as chickpea stews, potatoes or meats such as lamb. It also accompanies fatty fish. Cured cheeses, cecina or orza sausages.
