Mirabella was founded in 1979 by a group of wine professionals from Brescia with a passion for viticulture and oenology. It was among the first wineries in Franciacorta to believe in the uniqueness of its territory and the potential of the “Franciacorta” name. Visionary oenologist Teresio Schiavi, together with Giacomo Cavalli, laid the foundation of the winery in Paderno Franciacorta. Today, Mirabella encompasses 45 hectares of vineyards registered under Franciacorta DOCG and is renowned for sustainability, quality, and its distinctive style.
Every creation, an unmistakable style. From the bond with the land, Mirabella create Franciacorta wine with great personality. One of the distinguishing features is the use of Pinot Bianco, which is rare in Franciacorta: it adds freshness, elegance and gentleness. Another distinguishing feature of Mirabella is the age of the vineyards, fundamental for the longevity of Franciacorta wines, which enjoy a privileged, vocated position with ideal hillside exposure.
The Pas Dosé Reserves Produced only in exceptional vintages, DØM and DØM Rosé are Mirabella Reserve, the deepest heart of Mirabella. They age in the cellar for up to 85 months, when 60 would suffice. This is a long time, chosen to achieve rare maturity and absolute elegance.
They originate in Mirabella oldest vineyard, are harvested with maniacal care and vinified with artisanal precision. The result? Franciacorta of the highest class, capable of narrating not just a vintage, but Mirabella history.
About the wine
Produced only in the finest vintages, DØM Rosé Riserva represents a rare meeting between the bold personality of Pinot Noir and the elegance bestowed by long ageing.
The grapes come exclusively from the Mirabella vineyard, located in Paderno Franciacorta. Soil: Fluvio-glacial. Vineyard training system: Sylvoz, 3,000 vines/ha. Average vine age: 41 years. Yield: Not exceeding 60 q/ha.
Harvest: Manual, selecting only perfectly ripe and healthy bunches, picked into small perforated crates. Harvest period: First half of August — starting with Pinot Bianco, followed by Pinot Nero, and finishing with Chardonnay. Gentle pressing of whole clusters with a low yield (50%). Fermentation at 16–18°C in cement tanks, with 15% in barriques. Pinot Noir undergoes 18–24 hours of skin contact. Reserve wines: Only base wines from the same vintage.
