At 800 meters above sea level, on the gentle hills that were once the seabed of the Mediterranean and under the shelter of the Sierra del Negrete (Utiel), a unique landscape opens up to the eye. An environment where pines, holm oaks and olive trees join the aromatic notes of thyme, rosemary and fennel that dot the valley and combine to wrap the fruit of the vineyards of the Sarrión-Martínez family, la Bobal. A strong grape that, withstanding extreme climates and apparently infertile limestone soils, cultivated through natural and pioneering processes in the area, offers a fruit full of nuances, elegant and delicate. A grape expression of the soil, the climate, the aromas of the mountains and the proximity of the sea that, together, give the wine its unique Mediterranean character.
Mediterranean mountain vineyard, at 850 meters of altitude. At our Finca Conejeros, north of Requena. Vineyard planted in 1998. Single plot of 3.3 ha. This wine is a true reflection of the terroir where it is planted, made up of sandstone rocks with quartz and feldspar from what was once sea mud, where we find pisoliths, very peculiar fossils from the Jurassic. Cluster selection table, fermentation with native yeasts in oak vats with 50% stems. Maceration of 5 weeks little extractive. Aged for 8 months in an 80-hl oak vat. Bottled in August without stabilization treatments.
Medium opacity, bright red. With a surprising and intense nose, mineral notes of phosphorus and red fruit interspersed with coppice, thyme and burlap. Great freshness in the mouth, medium to light body, with a volume in the mouth, silky and very long. Very pleasant and balanced finish.
You can take it with appetizers, grilled fish, white meats, pasta, dishes with creamy sauces and rice dishes.
