Poulet & Fils is a four‑generation family winery located along the steep hillsides of the Drôme Valley. The vineyards are planted in small clay‑limestone plots around the villages of Pontaix, Montlaur‑en‑Diois, Vercheny and Châtillon‑en‑Diois. Muscat, Clairette, Chardonnay, Aligoté and Gamay thrive in this exceptional climate, shaped by harsh winters and Mediterranean summers. The estate follows sustainable practices and holds the High Environmental Value (HEV) certification, highlighting its commitment to biodiversity and soil health. Once fully ripe, the grapes are carefully harvested and vinified to produce high‑quality Clairette de Die, Crémant de Die and Châtillon‑en‑Diois wines.
Winemaking
Made from a selection of southwest‑facing white marl terroirs to enhance freshness and liveliness rather than muscat aromas. The Gamay undergoes a one‑week cold maceration during which pressing takes place. The slow fermentation of all juices is driven by indigenous yeasts under temperature control. A second fermentation in the bottle is supported by the grapes’ natural residual sugars, with no addition of tirage liqueur. After four months in the bottle, the sediment is removed.
Tasting notes
Medium salmon‑pink, sweet and naturally sparkling. Rich exotic fruit, floral and citrus aromas (grapefruit / rose) with a long finish. Serve well chilled (8°C). Keeping: drink young.
Food pairing
Enjoy as an aperitif or paired with desserts such as strawberry tart or fruit salad.
