Vinification
The grapes, harvested at the time of their complete maturation, short cold maceration, soft pressing, fermentation at controlled temperature. Slow refermentation in autoclave, aging and aging in bottle.
Tasting notes
Although referring to the starting wine, the full-bodied and dry Aglianico of a well defined DOC area of Benevento, are as mitigated by the process of sparkling, and the final result is a wine enveloping and soft to the taste, pleasant to the nose with hints of red fruit and undergrowth and pink with vivid chromatic nuances.
Food pairing
Pleasant as an aperitif, it accompanies meals including appetizers and fried foods.
