Moillard, historically based in Nuits-Saint-Georges, in the Côte de Nuits, offers Domaine wines (Côte de Nuits and Côte de Beaune) and a traditional signature of Burgundy wines. The old documents of Nuits-Saint-Georges attest that the Moillard family already owned vineyards before the French Revolution. But the Winery saw a real boom in 1850, when Symphorien Moillard bought his first wines to satisfy an order too important for his own Domain, thus initiating his activity of wine trading. Since then, Moillard has carried out the meticulous job of wine making and aging to bring all their wines to their full potential.

Winemaking

The soils are granitic in nature, with schists and clay veins in the Beaujolais, calcareous and marly on the Côte Chalonnaise, limestone and kimméridgian clay-limestone on Epineuil. The characteristics of these soils contribute to the complexity and finesse of the wine. The grape harvest follows a careful process that begins with the immediate pressing of the bunches, using pneumatic presses. Subsequently, we proceed with the separation of the solid sediments, called débourbage. The alcoholic fermentation takes place in stainless steel tanks at a controlled temperature, followed by the blending of the wines which then undergo a second fermentation in the bottle. The refinement takes place for 15 months on the yeasts, after which the wine is placed on rotating supports and finally disgorged, with the addition of the liqueur d’expédition.

Tasting notes

It has a pale yellow color with golden reflections, characterized by fine bubbles and a persistent foam. On the nose, delicate notes of white flowers, walnut and peach emerge. In the mouth, it stands out for its freshness, with floral aromas and a notable aromatic persistence, where the fine and delicate bubble enhances its elegance.

Food pairing

It is ideal as an aperitif, but its versatility allows it to also accompany a meal or enhance fruit-based desserts.
