Winemaking

Spontaneous fermentation in stainless steel tanks and large oak casks; full
lees ageing without sulfur – with bâtonnage – until spring; followed by
traditional bottle fermentation, ageing on the lees, no dosage and minimal
sulfur addition.

Tasting notes

Fine, delicate mousse. Exceptionally clear, fresh and vibrant on the nose, multi‑layered with aromas of freshly toasted bread, ground coffee, salted caramel and lemon. On the palate taut and precise, with linear acidity and razor‑sharp structure. Highly focused and exact, saline with pronounced umami carrying through to the finish. Serving Temp.: 8–10°C.
