Since 1956, the Aldegheri family has been working in the heart of Valpolicella, driven by passion, dedication, and a continuous commitment to refining the winemaking craft that has made this territory renowned worldwide. Each family member contributes through a distinct role: Lorenzo oversees viticulture and vinification, Adriano manages administration and the development of innovative production systems, while their cousin Vincenzo leads the commercial activities and public relations. The second generation also plays a vital part, bringing fresh perspectives and modern expertise. The family spirit of the Aldegheri estate, combined with a perfect balance of technology, respect for nature, meticulous grape selection, and constant improvement of winemaking techniques, has enabled the creation of wines that embody the soul of the land and offer moments of genuine pleasure.
Valpolicella Classico Ripasso DOC Santambrogio is a refined, age‑worthy red wine with a deep ruby colour. It is produced from grapes grown on the hills of Santambrogio di Valpolicella and undergoes the traditional “ripasso” method — a second fermentation on the pomace of classic Recioto and Amarone wines. The bouquet reveals pronounced notes of plum and marasca cherry, followed by a well‑balanced, full‑bodied and robust palate.
Winemaking
Grapes are destemmed and gently crushed. Fermentation takes place in temperature‑controlled tanks with a soft cap‑breaking system, ensuring full extraction of colour and aromas exclusively from the free‑run must, without pressing. At the end of winter, the wine undergoes “ripasso”, re‑fermenting on Recioto and Amarone pomace, gaining additional body and intensity. In early spring, after racking, the wine is aged in large oak casks, followed by bottling and bottle ageing.
Food pairing
Excellent with red meat, game, roasts and rich stews.
