At the Allacher winery, the indispensable knowledge of tradition are combined with the modern insights of the next generation. What grows from this are great wines. The vineyards are located on about 30 hectares of the unique wine-growing region of Neusiedlersee, including the legendary vineyards Altenberg and Salzberg. The soil gives the potential. The winery provides natural, attentive care. Fresh fruity white wines, powerful dense red wines and extract-rich sweet wines are the precious result. Here happiness and glass find each other.

Winemaking

The grapes are harvested very late, at maximum ripeness. They are hand‑picked and immediately selected during harvest. Only very ripe, healthy, top‑quality grapes are used to produce Imperium.
The grapes are crushed and placed into stainless‑steel fermenters. After a 24‑hour cold maceration, yeast is added to start fermentation. The cap is punched down 10–12 times per day. This results in a wine that is extremely full‑bodied, rich in extract, spicy, dense, very dark, and intensely flavored.
Fermentation lasted 12 days. After completion, the wine remained on the skins for an additional 28 days. Only free‑run wine (flowing naturally without pumping) is used for Imperium.
After two days of settling, the wine is transferred into new barriques, where malolactic fermentation begins. During this process, lactic acid bacteria convert sharp malic acid into softer lactic acid, reducing overall acidity. This makes the wine much smoother and rounder.
After 12 weeks, malolactic fermentation is complete; the wine is racked and aerated. After filtration, the barriques are refilled.

Tasting notes

Deep dark ruby with an almost opaque core and a gently glowing rim. On the nose: inviting dark berries, heart of ripe cherries, a touch of citrus peel, spicy notes, and a hint of licorice. On the palate: juicy and complex, dark berries, Zwetschkenröster (stewed plum) notes, fine acidity, well‑structured tannins. The finish shows berry notes, excellent food‑pairing qualities, and strong ageing potential. Recommended serving temperature: 18°C.
