The Anne de Joyeuse cooperative is named after a well-known 16th-century figure, the Duke of Joyeuse, who was bestowed the lordship of Limoux by Henry III.
About the wine
The “Very” range embodies the full richness of the terroir. To the west, our vineyard influenced by the oceanic climate and planted on clay‑limestone terraces brings elegance. In the northeast, the Mediterranean influence and its clay‑silt molasse soils provide fruitiness and power. In the south, the Upper Aude Valley allows each grape variety to ripen slowly, giving freshness and finesse.
These remarkable conditions, combined with vineyard practices that follow “Protect Planet” charter, allow us to obtain the finest grapes for crafting this wine.
Winemaking
After pressing, the must is placed in 220‑liter barrels to undergo fermentation. Daily bâtonnage during the first two months helps “nourish” the wine and develop greater aromatic depth and complexity. The wine is aged for 4 months.
Tasting notes
A bright golden colour. Aromas of white flowers, citrus, white peach and subtle brioche notes. On the palate, the wine shows beautiful balance and a fresh, clean finish.
Food pairing
Perfect as an aperitif. It pairs elegantly with asparagus charlotte, pike‑perch in cream sauce, whole‑bone sole, or skewers of goat cheeses. Serve at 12°C and decant for thirty minutes to allow full expression.
