The Ca’ Salina Winery is located in a magnificent position, standing atop a hill in the heart of the Valdobbiadene DOCG area. From its windows you can admire the stunning beauty of the Prosecco Superiore hillsides embroidered with vineyards and the ‘Strada del Vino’ wine road. The estate’s large family villa dominates the surrounding landscape and is an obvious destination for wine lovers visiting the area. Tradition, a passion for the land and an appreciation of simple pleasures. These are the values which have motivated the choices made by Gregorio Bortolin and his wife Neva, and which the couple have passed on to their sons Massimo and Michele. With these values firmly in mind, innovation makes sense, as it contributes to ensuring the quality of Ca’ Salina’s products.
Winemaking
Cold maceration under soft pressure with cold filtering so as to slow down the fermentation. Second fermentation (or spumantizzazione) in the autoclave under controlled temperature (known as the “Charmat” method or “Italian method”).
Tasting notes
A straw yellow sparkling wine with a rich, fine and persistent perlage. The bouquet is broad and refined with hints of yellow fruit, vanilla and herbs. The flavour is soft, harmonious and lively.
Food pairing
Excellent as an aperitif, this wine really should be tasted with raw fish dishes.
Serve between 6° and 10°C.
