Winemaking
El Aziz from the Arabic ‘The Magnificent’ is the result of a late harvest of Grillo. It is harvested strictly by hand, in the first ten days of October, leaving the fruit to dry on the vine. This wine was born by chance during the 2003 harvest in Sicily, thanks to a very hot summer that allowed the grapes to ripen early. Vertical trellising, with Guyot pruning. 200 metres above sea level, with a density of 5500 plants per hectare. Yield of 40 quintals per hectare. Harvest at the end of September. Fermentation in steel, ageing in steel, six months in bottle.
Tasting notes
It has an intense straw yellow colour with clear and marked golden hues, tending towards amber. Aromas and sweet scents that are impressive for their evolutionary complexity reminiscent of very ripe and dried white fruit, such as: pineapple, peach and apricot, as well as: vanilla, honey and sweet spices, with soft and enveloping aromas and scents of great structure and harmonicity, warm with alcohol, with a delicate bitterish finish.Recommended serving temperature: 10°C — 12°C
Food pairing
It goes well with blue cheeses (it is perfect with gorgonzola), or creamy desserts, or even with delicate desserts such as mousse, bavarois or savarin.
