Winemaking
The vinification is precise and focused, allowing the natural varietal character of the Chardonnay and the Chablis flinty terroir to shine through with minimal oak treatment. The wines are also racked in the traditional way, avoiding any unnecessary filtering that might alter the taste of the wine. Limestone & marl soils. Traditional vinification. The grapes are pressed on arrival at the winery using pneumatic presses. The fermentation takes place in stainless steel tanks thermoregulated at 16°C. Aged on the lees for 9 months. Yield 60 hl/ha.
