Comes from a 28‑hectare vineyard in the commune of Bégadan, owned by the Sallette family for several generations. The atypical dominance of Merlot gives the wine roundness and finesse.

Winemaking

Soils: clay‑limestone with sand. Three‑week fermentation in temperature‑controlled cement vats, followed by 18 months of ageing in oak barrels.

Tasting notes

Deep garnet colour. Aromas of liquorice and toasted notes typical of oak ageing. The palate shows freshness, balance, and a well‑shaped structure. Perfect to drink now.

Food pairings

Sauced dishes, grilled meats and fish, cheeses. Serve at 17–18°C.
