Winemaking

The grapes are hand-picked and gathered in 15 Kg lined crates. Direct pressing with selection of different portion of must. Cold settling and pumping off the clear juice from settlement. Addition of selected yeasts. Temperature controlled alcoholic fermentation (for about one week). Cold tartaric stabilisation in the month of February. Blending and bottling in the month of March.

Tasting notes

The wine is pale yellow with greenish reflections. The bouquet is intense and persistent, bringing to mind flavours of dried fruits, almonds and hazelnuts with hints of acacia and lilies of the valley. The taste is soft and smooth on the front palate, conjuring up flavours of dried fruits and almonds. There is great balance evident in the mid-palate whilst the finish is pleasing and elegant. A wine of notable personality which reflects the classic style of Est Est Est.

Pairing recommendation

It goes especially well with pasta and rice dishes, but also with fish and poultry.
