The history of the Fabiano Winery was founded in 1912 when the founder Francesco Fabiano, with his son Sergio, began to sell their wines in the city of Venice and from this expands its activity in the Veneto hinterland to Verona. At the end of the fifties Sergio Fabiano and his sons moved permanently to Verona, initially in the Cellar of Colà di Lazise where the trade activity took place in all of Northern Italy. In the following decade the family began the construction of a new winery in Sona which became, starting in the early seventies, one of the largest wineries in Italy in terms of volumes of wine produced. The commercial growth of the eighties and nineties saw Fabiano wines exported to all the main countries of the world in ever increasing volumes making Fabiano one of the main wineries of the Verona and national oenology.
Amarone Rugola is a modern reinterpretation of Fabiano’s renowned “historic line”. High‑quality grape selection, respect for tradition and the winery’s long‑standing commitment are presented in a contemporary style suited to a young, fresh, demanding and detail‑oriented audience.
Winemaking
Amarone is a wine of ancient lineage. It is produced in limited quantities with grapes from the classic Valpolicella area, carefully selected, dried and vinified according to ancient tradition. Vineyards located in the municipalities of San Pietro in Cariano and Negrar at 190–370 m a.s.l. Veronese pergola training system positioned in terraces contained by dry stone walls (marogne). Harvest: manual. Crushing: gentle pressing of partially destemmed grapes. Vinification: after the ancient appassimento technique (approx. 4 months), in the second half of January the grapes are gently pressed and partially destemmed. Fermentation takes place in stainless‑steel tanks for about 50 days, including around 30 days of skin maceration. Ageing: 30 months in 40‑hl Slavonian oak casks, followed by 3 months in bottle.
Tasting notes
Amarone Fabiano stands out for its intense colour with garnet reflections. The bouquet is highly complex, combining red‑fruit aromas with subtle spicy notes. On the palate it shows intensity and elegance, supported by balanced tannins and adequate acidity. Sugar: 4.6 g/l.
Food pairing
It is ideal with braised meats, game and very tasty hard cheeses. It is also suitable at the end of a meal. Serve at a temperature of 18°C, taking care to open the bottle a few hours before serving.
