Traditional production together with good and excellent raw material and the realization of vinifications differentiated by varieties and plots, allows Pagos de Araiz to create complex and balanced wines. They base themselves on the tradition of a culture, on the wisdom of their ancestors and the knowledge that emanates from this land. They elaborate in the present without forgetting their roots, take advantage of every experience of the past to innovate day by day always looking for their best version.
Winemaking
The grapes are selected in the vineyard and on the sorting table when they enter the winery. Alcoholic fermentation takes place over a period of 12 days, with daily very gentle maceration, but prolonged until the wine is devatted. Malolactic fermentation takes place in the same French oak barrels in which the wine is aged for 8 months. The barrels are selected from among those already one or two years old, both 225 and 500 litre.
Tasting notes
Medium cherry red colour with purple tones that denote its youth. Floral aromas of lilacs, cherry and orange fruit, clean and intense. Lively and sweet on the palate, balanced and long, clean fruit and silky finish. Persistent. It is an expressive wine that marks the origin of the variety and the cold area from which it comes. It is attractive and has a different personality.Recommended serving temperature: 15 ° – 16°C
