Alcoholic fermentation takes place over a period of 12 days, with daily very gentle maceration, but prolonged until the wine is devatted. Malolactic fermentation takes place in the same French oak barrels in which the wine is aged for 8 months. The barrels are selected from among those already one or two years old, both 225 and 500 litre.
